A delicious corn chowder with bacon.
INGREDIENTS:
* 1/2 cup diced bacon
* 4 medium potatoes, chopped
* 1/2 medium onion, chopped
* 2 cups water
* 2 cans (12 ounces each) cream-style corn
* 2 teaspoons salt
* pepper to taste
* dash of Cayenne pepper
* 2 cups half-and-half or light cream
* sour cream to garnish
* shredded pepper jack cheese to garnish
PREPARATION:
Sauté bacon until browned and crisp; Remove from drippings and let drain on paper towels and cool. Add chopped potatoes and onions to bacon grease and sauté for five minutes or until onions have stared to turn translucent. In the meanwhile, crumble the bacon and return it to the pan. Add water, corn, and seasonings; cover and simmer for 15 to 20 minutes. Stir in half-and-half; heat through but do not boil. Serve immediately with a dollop of sour cream and a sprinkle of shredded pepper jack cheese. Gourmet comfort food! One of my family’s favorites!
